The palate is the roof of the mouth and its soft, fleshy pendant; figuratively it is also the sense of taste. 

A palette is the painter’s board on which paints are mixed, and it is also figuratively the collection of colors with which a given painter works.

A pallet is any of a number of specialized tools or devices, the most common of which is the rough wooden platform used for stacking boxes or for holding machinery and other large items so that they can be moved by materials-handling equipment.
